What happened to the buffalo? That’s the question someone asked me the other day. Once upon a time, buffalo was going to be the agricultural product that would save the farmer, if not the entire meat industry. They produced a lean, heart-healthy meat that was tasty and an excellent substitute for beef and pork. For a time buffalo operations were popping up all over the place. Just about every county in the area had at least one.

They all seem to be gone now. The farms that raised them are either abandoned or converted to other types of operation. Like other agricultural fads such as llamas, emus, etc. this was a market that didn’t really exist and which was profitable only for a very, very few breeders.
